Rain is pouring on the tent roof, almost drowning the voice of gastrosuperstar Rene Redzepi, opening the symposium. He wears rubber boots and jokes that the rain is arranged By Food industry lobbyists.
The ones that try to erase the many wonderful plant species we should protect in stead of basing our food intake on a few species like potato and wheat. These words are said by author Tor Nørretranders, the next speaker, challenged by thunder in the distance.

“You are gastronauts,” says Nørretranders and urges the chefs present “not to feed the rich guests bread and potatoes” as this is shortsighted, nutrition- and environmentwise. He receives a wild applause, leaving the scene to british master forager, Miles Irving.
