René Redzepis Head Chef at Noma is american Matt Orlando. But not much longer, since Matt is opening his own restaurant soon. It will be near Noma, in an old industrial building, where he will plant a vegetable garden in front.
Name of the restaurant will be Amass and the kitchen style will not be nordic. Before opening, Matt is going on an inspirational tour to Japan, Australia and Brazil.
Matt grew up in California and has previously worked at The Fat Duck in England and Per Se in New York.
