Recently I have felt, that a few too many chefs were a little too busy copying Noma. Looking at the website of newly opened Bror restaurant, I was a little bit turned off, by seeing many aspects so well known from Noma.
But as I have written in newspaper Børsen today, this is in no way a pale copy of Noma, this is the real thing, however in a simplified version. You can compare it to the serigraphy method, where an artists original work is spread out, so to say.
It sounds corny, but I felt the love in this very simple restaurant, that offers not much comfort, but food, wine and hospitality of a degree you seldom experience.
