Where Noma left Barr takes over

In the home of Noma, a new restaurant will open today. It’s called Barr, and is owned by Noma and chef Thorsten Schmidt, who has been one of the avantgarde chefs on the modern danish modern for more than 10 years.

The food at Barr will focus on the culinary traditions og the northern countries. Not like Noma, who started by stretching out to the North Atlantic, but in a broader sense, covering the west to the british isles, east to the Baltics and south to Holland.

Frikadeller at Barr. Frikadeller is probably the most loved danish staple food, regard a national dish, but in fact common in several neighbouring countries. Usually made with minced pork, egg, milk, flour, onion and sometimes mixed with veal.
